Abstract. Protein is a group of macronutrient material that plays an important role in the formation of biomolecules as an energy source. The purpose of this research is to find out more effective formulations between biscuits from earthworm flour (Lumbricus rubellus Hoffmeister) and biscuits from necklace cricket flour (Gryllus bimaculatus sp) to be fortified with wheat flour which has a high enough protein content. The method used to determine the protein content of earthworm flour (Lumbricus rubellus Hoffmeister) and cricket flour necklace (Gryllus bimaculatus sp) is the kjehdahl method. The results obtained protein content in formulations containing cricket flour necklace (Gryllus bimaculatus sp) amounted to 9.89 - 15.70% and formulations containing earthworm flour (Lumbricus rubellus Hoffmeister) amounted to 8.13%. So that a more effective formula to be fortified with flour that has a high enough protein content is a formula with the addition of flour cricket necklace (Gryllus bimaculatus sp).Keywords: Protein, cricket necklace, earthworm, kjehdahlAbstrak. Protein merupakan salah satu kelompok bahan makronutrien yang berperan penting dalam pembentukan biomolekul sebagai sumber energi. Tujuan dari penelitian ini untuk mengetahui formulasi yang lebih efektif antara biskuit dari tepung cacing tanah (Lumbricus rubellus Hoffmeister) dan biskuit dari tepung jangkrik kalung (Gryllus bimaculatus sp) untuk dijadikan fortifikan tepung terigu yang memiliki kandungan protein yang cukup tinggi. Metode yang digunakan untuk mengetahui kandungan protein pada tepung cacing tanah (Lumbricus rubellus Hoffmeister) dan tepung jangkrik kalung (Gryllus bimaculatus sp) adalah metode kjehdahl. Hasil yang diperoleh kadar protein pada formulasi yang mengandung tepung jangkrik kalung (Gryllus bimaculatus sp) sebesar 9,89 - 15.70% dan formulasi yang mengandung tepung cacing tanah (Lumbricus rubellus Hoffmeister) sebesar 8,13%. Sehingga formula yang lebih efektif untuk dijadikan fortifikan tepung terigu yang memiliki kadar protein cukup tinggi adalah formula dengan penambahan tepung jangkrik kalung (Gryllus bimaculatus sp).Kata Kunci: Protein, jangkrik kalung, cacing tanah, kjehdahl
