dc.description Abstract. Control chart is a statistical tool that is very important to use to determine whether the process is statistically controlled or not. To measure the variability process, there are control charts that can be used, namely control charts and standard deviation control charts. This control chart, easy to implement and effective in large shift processes. Furthermore, Adeoti (2016) introduced a control chart for controlling the variability of the production process based on moving average statistics, namely the moving average standard deviation control chart. This method is suitable for small or large sample sizes and is more sensitive when there are small or moderate changes. The application of the moving average standard deviation control chart is used to control the quality of data on Free Fatty Acid (FFA) levels in PT X based on data from September-October 2013. The results show that monitoring the process variability of Free Fatty Acid (FFA) levels in the first stage is said not controllable because there are two points that are out of control. And in stage two (revision), the process is controlled because the flow of data is under control.Keywords: Control chart, moving average control chart standar deviation, process variability.Abstrak. Diagram kendali merupakan salah satu alat bantu statistik yang sangat penting digunakan untuk memantau apakah proses terkendali secara statistik atau tidak. Untuk memantau variabilitas proses, terdapat diagram kendali yang bisa digunakan yaitu diagram kendali rentang dan diagram kendali simpangan baku. Diagram kendali ini, mudah diimplementasikan dan efektif dalam mendeteksi pergeseran proses yang besar. Selanjutnya, Adeoti (2016) memperkenalkan diagram kendali untuk memantau variabilitas proses produksi yang didasarkan pada statistik rata-rata bergerak yaitu diagram kendali rata-rata bergerak simpangan baku. Metode ini cocok untuk ukuran sampel kecil maupun besar dan lebih sensitif ketika ada perubahan kecil maupun sedang. Penerapan diagram kendali rata-rata bergerak simpangan baku digunakan untuk mengendalikan kualitas data kadar Free Fatty Acid (FFA) di PT X berdasarkan data bulan September-Oktober 2013. Hasil menunjukkan bahwa pemantauan variabilitas proses kadar Free Fatty Acid (FFA) pada tahap pertama dikatakan tidak terkendali karena terdapat dua titik yang berada diluar batas kendali. Dan pada tahap dua (revisi), proses terkendali karena keseluran data berada didalam batas kendali.Kata Kunci: Diagram kendali, Diagram kendali rata-rata bergerak simpangan baku, proses variabilitas.
